Those interested in learning more about food preservation at home are invited to a class at the Greene County ISU Extension office in Jefferson next week.
Extension Coordinator Michael Cooley says the “Preserving the Taste of Summer” will be taught by health and nutrition specialist Holly Van Heel and she will share information about how to do certain types of canning for hot water bath and freezing methods.
He states that the class is open to anyone at any skill level with canning and describes other tips will be receive during the workshop.
“The great thing that Holly (Van Heel) puts into it, is not just how to do it but also things to keep in mind to make sure that you are being safe. Food safety is one of her top concerns when she’s teaching this class. And that is something that has certainly changed from maybe 20 years ago when some of our more experienced canners started canning.”
Cooley adds that there will be fresh salsa for participants to sample as well.
Today is the final day to register for Monday, August 4th’s class from 6-7:30pm. There is a $5 fee to take the course and you can sign up for it by calling 386-2138 or by stopping by the Extension office in Jefferson.
