A mainstay with Greene County High School is starting up once again.
The Ram Bistro at Ram Restaurant has its opening day today as five high school students prepare and serve various meals to fellow students, school staff and the public. Instructor Julie Kennedy says they offer a different cream and broth-based soup, along with daily specials and sandwiches when the Bistro is open Tuesday-Thursday from 11:30am-1pm. She adds the specials are based on using a tortilla on Tuesdays, homemade pizza crust for Wednesday and sandwiches on Thursday. Kennedy talks about the skills that students receive working in the bistro.
“So a lot of bistro skills is using commercial kitchen equipment that you wouldn’t probably do at home. So how to use a steam table? How do you use a griddle, a proofer? And so how to use those and how to make those work?”
Kennedy explains why they continue to have the bistro from December through mid-February before transitioning to Ram Restaurant in March.
“It’s a good segway because Ram Restaurant is so many aspects that you have to have figured out. Where bistro kind of limits it a little bit of what needs to be done. So the kids get the practice at doing the limited things so that the big things of (Ram) Restaurant don’t seem so overwhelming.”
Instructor Brandon Gustoff says whenever school is closed Tuesday through Thursday, the bistro is also closed.
The public is encouraged to order and have students prepare and serve their meal. Orders must be submitted by 10am the day of. Orders can be done over the phone by calling 515-386-6102 or online by clicking the link below. A combo meal of a sandwich and soup or the special and soup is $9, plus there are individual food items.
